"What is a low carb recipes?"
"What is a low carb recipes? And what is consider eating low carb?"
These are the questions I was often asked.
Low carb recipes is cooking focus mainly on protein, fat, and fiber. Eating low carb means we eat a bigger portion of protein, fat and fiber with almost no starch.
“And why is eating low carb good?”
For many years I consider myself fat, though my friends said I was heavy.
After eating low carb for about 6 months, I felt like the fat in my body has melted away!
That inspire me to look into more low carb recipes to cook with.
Yes, I eat protein, fat and fiber and I can stay slim because I don’t eat anything that made out of simple carb and sugar. The reality is eating fat without eating carb don’t make us fat.
Follow the idea of cooking with low carb recipes and eating low carb allows me to enjoy eating many different kind of delicious food everyday without getting fat. That includes enjoying cheese and butter that I always like but had stay to away from in the past.
The most important of all, my latest lipid profile also shows a healthy result of my LDL and HDL cholesterol, and triglycerides level. The lipid profile result is just like a map showing us if we are on a right or wrong path of our health. It could also serve as a warning sign before any major health issues occur.
“What is bad about eating carb besides the challenge of getting fat?”
Basically anything that is starchy like white rice, noodle, pasta, potato, and any things that made out of plain flour including bread and pastry, are all consider simple carb that quickly turn into sugar in our body. In simple terms, those carb are the same as sugar.
Excess sugar in our blood raises our insulin level. Insulin is a natural hormone in our body that regulates blood sugar level and is also influences whether we are sleepy, hungry, satisfied, dizzy, stuporous or bloated. It can raise blood pressure, cram fat into fat cells, and cause the body to retain excess fluid.
Long term of excess blood sugar and high insulin are the contributor to many other health issues to follow.
“So what is considering carb that I should stay away?”
Simple carb includes potato, pasta, noodle, plain rice and anything that made with plain flour and sugar. Vegetable and fruit have carb too but it is a more complex carb with a low glycemic index that is slower to absorb into our body.
If you have look around for some low carb recipes, it usually do not include any plain simple carb in the cooking.
“What do you normally eat for your meals?”
I mainly follow the rules of cooking with low carb recipes. My breakfast is mainly eggs with bacon or sausage, tomato, onions, and mushroom etc. and any meat protein that I might cook with breakfast. For quick breakfast would be homemade granola or oat meal.
Lunch is usually a portion of protein and salad, or homemade soup.
Dinner would be a little fancier because my husband and I like to have a nice dinner together with a glass of wine. We normally would have meat or seafood with veggies.
“What about dessert?”
The less I eat carb and sugar the less I would crave for anything sweet. Occasionally we would have a good decadent chocolate dessert make at home using my own low carb recipes that I tested and improve to satisfy our own taste bud.
When dining out, we also make sure that the dessert we choose from the menu are also baked with low carb recipes in mind. Fortunately most restaurant are beginning to realized customer healthy preference and are providing flourless dessert on their menu.
"Don't you miss the pancakes, muffins, potatoes and pasta?"
Honestly, I don't miss this simple carb anymore because I’m aware what it would do to my body. And there are so many delicious and nutritious food that I can eat why would I want to feed my body with plain carb that have nothing good for my body.

A low-carb lifestyle is not a short-term diet plan. It is an improvement of healthy eating life-style that is enjoyable and sustainable. Now I enjoy testing, tasting and developing new low carb recipes everyday and eating all the delicious meat and seafood every meal.
Carb are no longer food to me anymore.

My husband shared this: When he was in a health conference and one of the Prof were sharing the magic of eating low-carb. Many audiences were skeptical to his sharing. In the end of the presentation he said: “Don’t trust anything that I just said. Try it yourself for a month and if you don’t like the result or is not working for you, go back to your original eating habit.”
